Chocolate Covered Caramel Matzoh Crackers
These dessert crackers are perfect for Passover. And really any time of the year! Sometimes you hear of this called Brickle, but if it is made with Saltines, then it isn’t right for Passover.
- 6 matzoh crackers
- 1 cup butter
- 1 cup brown sugar
- 1 cup chopped or shredded good quality chocolate, your desired darkness (I prefer dark)
Preheat the oven to 375°F.
Take the matzohs and lay them out on a greased baking sheet with sides.
Put the butter and sugar in a medium sauce pan and heat over medium heat until the butter melts, stirring constantly. Allow the butter to boil briefly and make sure it is all melted. Stir well and remove from heat. Pour melted butter/sugar evenly over crackers.
Place pan in the oven and allow the crackers to bake for 15 minutes, but keep checking to make sure it doesn’t burn. if it starts to brown too quickly, lower your heat.
After 15 minutes, remove pan from over and cover in the shredded or chopped chocolate and spread as it melts, all over the crackers. Sprinkle with nuts if desired and allow it to harden and cool.
