Focaccia Waffles

The texture of waffles offers up a fun way to serve focaccia! Serve with an arugula salad, sliced fresh mozzarella and prosciutto alongside.

Ingredients

For the waffles:

  • 1 round pizza dough, cut into 2 pieces
  • Extra virgin olive oil (EVOO), for rubbing the dough
  • 2 tablespoons rosemary, chopped
  • 2 tablespoons thyme, chopped
  • 1 tablespoon oregano, chopped
  • Salt and pepper
  • 1 ball fresh mozzarella, sliced
  • 8 slices prosciutto

For the salad:

  • 2 cups baby arugula
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil (EVOO)
  • Salt and pepper

Preparation

To make the waffles, pre-heat the waffle maker to medium-high heat.


Roll out both halves of the pizza dough until they are about the size of the waffle maker. Rub the dough with EVOO and sprinkle rosemary, thyme, oregano, salt and pepper on both sides.


Lay the seasoned dough into the waffle maker, close the top and cook for 4 minutes.


To make the arugula salad, toss the arugula with lemon juice, EVOO, salt and pepper.


Serve the waffles with the arugula salad, sliced fresh mozzarella and prosciutto.
