Green Beans with Onion
This straightforward green bean dish will make a green bean-lover out of anyone, and goes well with a variety of meals.
- 1 tablespoon extra virgin olive oil (EVOO)
- 1 tablespoon butter
- 1 small onion, chopped
- 1 cup chicken broth
- 1-1 1/4 pounds trimmed green beans – many grocery stores have trimmed raw beans in packages in the fresh produce department in 1 pound packages
To a medium pan over medium heat add EVOO, butter and onion. Sauté onion three minutes; add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8-10 minutes, until tender.
