Hot ‘n Sweet Kettle Corn

Just in time for Halloween, serve with Salsa Cheddar Dip with Witches Hats to have a variety of snacks on hand. Add Devilish Sloppy Chicken Mini Sammies for a complete meal.


Kettle corn is one of those things that gets addictive after the first bite, so watch that the kids don’t overdo it and get tummy aches! –RR

Ingredients

  • 1/2 cup unpopped corn kernels
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon chipotle powder
  • 1 teaspoon salt

Preparation

Place the corn kernels, sugar, oil, chipotle powder and salt in a large kettle or pot with a tight-fitting lid over medium heat. When the corn begins to pop, shake the pot constantly. When the popping slows, remove from the heat and transfer the popped kettle corn to a bowl.

To keep the kettle corn sweet, omit the chipotle powder and adjust the sugar to 1/3 cup.
