Orange zest adds a little something special to ordinary cornbread. This recipe goes well with Sweet ‘n Spicy Grilled Chicken Breasts and Curry Rice Salad.
- 2 boxes cornbread mix (8 1/2 ounces), such as Jiffy brand
- 1 navel orange, zested
- 1 teaspoon coarse black pepper
- 1/4 cup honey
Pre-heat the oven according to package directions.
Prepare the cornbread batter as directed, then stir in the orange zest, black pepper and honey. Transfer to a 8-inch x 8-inch baking dish and bake according to package directions. Remove from the oven and cut into wedges or squares.
