Pecan Sandies

This recipe was sent to rachaelray.com from visitor, Susan Woody who tells us “This recipe was given to me by a co-worker friend 35 years ago. My family liked them so well I always had to make a double recipe – that’s a lot of cookies! Taste better than Keeblers. Great for cookie exchanges.”

Ingredients

  • 1 cup sugar
  • 1 cup powder sugar
  • 1 cup butter softened
  • 1 cup oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 cup chopped pecans

Preparation

Pre-heat oven to 350°F.

Combine first 5 ingredients; beat well. Add vanilla.

Mix flour, salt, soda and cream of tartar. Add to creamed mixture. Mix well.

Add chopped pecans. Chill dough 1 hour.

Roll dough into 1 inch balls. Place on sheet pan and mash with a glass dipped in sugar.

Bake 15 minutes or until lightly browned.
