Pico de Gallo

Try topping Rach’s Twice-Baked Jalapeño Popper Sweet Potatoes with this Pico de Gallo.

Ingredients

  • 3 medium plum tomatoes, seeded and diced
  • 1 small jalapeño pepper, seeded and finely chopped
  • 1/2 small onion, finely chopped
  • A few sprigs of fresh cilantro, finely chopped
  • Juice of 1 lime
  • Coarse salt, to taste

Preparation

Combine all the ingredients in a small bowl and set aside until ready to serve.
