Spanish Pie

Ingredients

  • Olive oil, for greasing
  • 2 large size tortillas
  • 1 can of spicy/fat-free refried beans
  • 1 cup of cooked white rice
  • 1 1/2 pounds of ground beef, cooked, or shredded chicken, turkey or beef
  • 1 jalapeño, not too hot, diced
  • 1 large sweet onion, diced
  • 1 bag of green onions, diced thinly
  • 3 colored peppers, diced
  • 1 jar black olives
  • 2 medium size tortillas
  • Butter
  • 1 bag shredded cheese
  • 1 cup of lettuce, shredded
  • 1 jar salsa

Preparation

Pre-heat the oven to 375°F.

Coat a glass pie plate with olive oil.


Pre-heat a medium size skillet. Place 1 large tortilla in the pan. Then place it down flat into a pie plate, creating the sides of the Spanish Pie.


Next, take the refried beans and mix them with one cup of cooked rice and place them onto the tortilla.

Sprinkle the cooked, seasoned ground beef on top of the beans and rice mix.

Sprinkle the diced jalapeño, onions, peppers and olives onto the ground beef. Finally, sprinkle the shredded cheese over everything.


Pre-heat another pan to heat the medium size tortilla.

Place a medium size tortilla in this pan and heat.

Cover one side of the tortilla with butter, then press it down onto the layer of food you just put onto the large size tortilla. You then repeat the process until you have three generous layers of tortillas and food.


Next warm one large size tortilla like all the others and lay it flat across the top of the pie plate. Make sure the browned side of the tortilla is facing down toward the food and a solid color for the top. Take a fork and make impressions all around the tortillas.


Next, sprinkle diced jalapeños, peppers, olives and shredded cheese over the top.


Make sure that all the sides are trimmed and even.


Place the pie in the oven for 12-15 minutes.

Turn off oven and open oven door, but leave the Spanish Pie inside to cool, but so that it will stay warm at the same time (and heat your home a bit too).

Remove the pie from the oven after about another 5 minutes. Let cool for another 5 minutes. Slice it like a piece of pie. Place each piece on a dinner plate. Drizzle salsa over it and garnish it with some green herbs. Then take some green onions and sprinkle over it.


Now you have a Spanish Pie to eat, a great treat for the family to make and it’s also a good leftover cold or reheated.
