This smoothie is naturally sweetened with strawberries and dates and flavored with vanilla and cinnamon. Soaking the coconut flakes, cashews and dates makes them soft, so they are completely smooth when blended. If you want to have this smoothie for breakfast, go ahead and soak the coconut, cashews and dates in the refrigerator overnight, then in the morning you’ll be all ready to blend.
- 3 tablespoons coconut flakes
- 1/4 cup raw cashews
- 4 pitted dates
- 1 1/2 cups cold water
- 1 1/2 cups frozen strawberries
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
Place the coconut flakes, cashews, dates and water in a blender and soak for 30 minutes. Add the strawberries, vanilla and cinnamon and blend until smooth.
