It’s almost time to celebrate the Chinese new year, which for 2008 is the year of the rat.  There are 12 animals in all so 12 years from now we’ll be back with the rat once again.  Until then, February 7th marks the new year so let’s celebrate with these Chinese-inspired recipes from Rachael Ray.
