How do you grate ginger?

Our preferred way of grating and storing ginger is to start with fresh ginger root and store it in the freezer, wrapped up nicely in parchment paper and then aluminum foil.  When you take it out to use it in a recipe, don’t let it defrost, but grate the whole thing, peel and all, using a microplane.  You can grate as much as you like right into the dish you are cooking and it melts away, leaving nothing but the flavor behind.
