What’s the difference between baby back ribs and back ribs?

We decided to call in the big guns for this one…Adam Perry Lang, BBQ expert and meat afficionado gave us this answer:

” They are both what is called loin back ribs. So they are really the same thing

and it is a term often abused – however, the official “baby back” ribs are a

smaller size of loin back ribs from a smaller animal. Loin back and baby back

ribs require less cooking, because they contain less collagen and connective

tissue then the spareribs. Some cooks and marketers often call all back ribs

“baby back” which is an abuse of the term. “
