What can you use in cooking instead of wine?
Some people don’t want alcohol in their food or they simply don’t like the taste or red or white wine so they want to know what to use instead. Truthfully, almost any recipe that calls for wine can withstand broth instead, but it will alter the flavor. For instance, if you are poaching fish in a stock or broth and white wine mixture, just use all broth and make sure there is some lemon juice in there if not already. If you are making risotto that calls for red or white wine, again, use all broth instead or a broth/water/wine combo. It will still be a delicious meal, but with a different flavor. Here are some Rachael Ray dishes that call for wine and our suggested substitutions:
Use dark juice instead of the red wine, like pomegranate or cranberry juice.
Use an extra 1/2 cup broth or stock instead of the white wine.
