Help! How do I cook better than my boyfriend’s mother??

Dear Rachael,

I’m not sure what to do – my boyfriend is in love with Italian food which is no surprise- he is Italian. His mother cooks these meals fit for a king. He is planning on moving in with me shortly and I’m afraid I wont live up to his mothers cooking. I have tried to find new  Italian  recipes  online but everywhere I look its the same old dishes. I was wondering if you could send me some recipes or direct me in some sort of direction so that this week when we have are weekly dinner I can surprise him with a dish fit for a king….. please please please help….

The key to good Italian cooking is not to find a complicated dish to out-do your boyfriend’s mom.  You stick with the most simple of dishes, the classics like lasagna or spaghetti and meatballs, but you use the best ingredients.  Use fresh herbs, good quality meats, good EVOO, fresh tomatoes if you can, good pastas, and you can’t go wrong.  Italian food is simple food and the key is in the freshness.  Also, make sure you use fresh Parmigiano Reggiano or Pecorino Romano cheese and not an imposter!!!  You must also make your dish with love and care and you will find your way to your boyfriend’s heart through his tummy for sure!
