When to put oil in the fridge?

When do I need to put oils in the fridge and when can I just leave them on the counter?


Dear Sharilyn,

If you use your EVOO quickly, you can leave it out on the counter.  But if you don’t use it too quickly,  it’s safer to store it in the fridge.  Don’t get worried when you go to use it and it appears cloudy or thick-it’s just cold and needs to warm up a bit.

If you infuse your oil with garlic or basil, for instance, it should go in the fridge right away as those are perishable foods.
