I am a huge fan.  Just a question… Why do you use canned chickpeas for the Falafel recipes? I am from the Middle East. I make it all the time. In the original recipe we use chickpeas that are soaked over night not boiled.  Thanks.

If you have the time and the dried chickpeas, you can soak them overnight or boil them for 30 minutes to soften them.  Canned chickpeas are a shortcut and will do in a pinch!
