Refreshing Cucumber Salads
English cucumbers are the long kind that are seedless and often sold wrapped in plastic. If you can’t find those, any cuke will be a great substitute in these summer salads.
Marinated veggies and roasted red peppers combine with celery and cucumber for a tangy salad that is a great alternative to regular mixed greens.
For a group of appetizers with an international flavor you may also wish to include Mediterranean Cucumber Caps and Asian Chicken Cucumber Caps.
This salad could be served as a main course.
For a complete meal, serve with Chicken Satay Stir Fry with Orange-Scented Jasmine Rice and Coconut Shrimp.
