Radicchio and Orechiette Salad

Rachael made this salad last night and I was lucky enough to stop over for dinner. It could not have been simpler to make. She took a:

  • 1 pound of orechiette
  • 1 head of radicchio
  • 1-2 tablespoons orange marmalade
  • Drizzle of EVOO
  • Drizzle of Red Wine Vinegar
  • Salt and Pepper

Put a pot of water on the stove and bring to a boil. Boil the pasta until al dente. Drain.

Meanwhile, while pasta is cooking, rinse and dry radicchio and chop to a shred. Whisk together marmalade, EVOO and vinegar in a large bowl.  Add warm pasta to the bowl of dressing and radicchio and the radicchio kind of cooks.

It’s amazingly good and simple!
