How do you defrost food safely?

If the food is uncooked, such as frozen chicken, you should let it defrost slowly in the fridge.  Don’t leave it out on the counter or start defrosting it under the tap.  You’ll wind up with an uneven defrosting process and then uneven cooking later on.  Plus, if you leave it out, it gives bacteria a chance to grow.

If you are defrosting something that is already cooked, like a frozen soup or sauce, you can just plop the soup or sauce in a saucepan and defrost over medium-high heat.  If it is something like a frozen pizza, you can defrost it in the oven.
