Easy cream of broccoli soup enjoyed by all

Today I decided to try a cream of broccoli soup as a way to entice my kids to get their veggies.  Here’s what I did:

I sauteed one chopped yellow onion in a few teaspoons of butter over medium heat.  Let that cook for 5 minutes until the onions became softish.  Then I added fresh broccoli that I had washed and roughly chopped, stems and all (the best part in my opinion).  I added 2 cups of chicken broth and let this simmer for 10-15 minutes, covered.  I seasoned with salt, pepper, one of my basil cubes from when I stored basil in the freezer, thyme and a grating of fresh nutmeg.  After this had cooked for 10-15 minutes, I shut it off and allowed it to cool, uncovered for another 20 minutes.  Once completely cool, I put it all into the blender and pureed it, while adding about 3/4-1 cup of milk.

The soup looks funny because it’s green.  Well, funny if you are a kid, but to me it looks delish.  Anyway, looks aside, it is so delicious and flavorful and by using low-fat milk, it tastes much more decadent than it is.  My kids loved this soup, but to be honest, the only way to get them to try it was to serve it in fun mugs and to add freshly baked, buttered croutons.
