A quick snack

This might look really unappealing at first glance, but trust me, this was a great snack.  I’m talking, you’re just getting home from work and it;s late and you need a quick snack before dinner.  Or maybe this becomes dinner.  My husband has been working late so some nights I do not make the full on meal for myself, because I am too hungry to wait, or I eat something as soon as I get home and then eat again with him.

So I sliced portobello mushrooms and chopped a bunch of fresh herbs, such as chives, rosemary and parsley.  I sauteed the mushrooms in EVOO until soft and meanwhile stuck a slice of bread in the toaster.  When the toast was ready, I smeared it with goat cheese, then topped it with the cooked mushrooms and gave it a grind of black pepper.  Delish!
