Can chicken be special enough for entertaining?

 With the economy the way it is, there won’t be a special Christmas dinner at our house this year. I’m going to use what we have in the freezer to make ends meet. I was thinking about something with chicken breast. Do you have any good ideas?

We are all in the same boat this year as far as cutting back on holiday spending and entertaining. The good news is you can still make a fabulous, delicious and festive dinner featuring our good friend the chicken breast. The great thing about chicken is that if you use it as your base, just one or two special ingredients that aren’t necessarily expensive (like bacon, puff pastry or a good parmesan cheese) can transform your meal into something special. Serve a nice green salad on the side with some fresh bread and you have a wonderful meal.
