Missy’s Mint Brownies

My aunt Missy has been bringing these delicious brownies with mint chocolate frosting to family gatherings for as long as I can remember – our Christmas Eve table wouldn’t be the same without a plate of these beauties being passed. I signed up to bring treats for “Teacher Appreciation Day” which happened to be St. Patrick’s Day and out came the mint brownies. Easy (they actually taste better with brownies made from a mix – Duncan Hines is my fave), impressive-looking, and green – perfect! I had to make a double batch and save some for my kids.

Mint Brownies

Make one box (for a 13 x 9 pan) of your favorite brownie mix according to directions – I like to add a handful of chocolate chips for good measure. Let cool.

To make frosting:


  • 1 1/2 c. confectioners sugar
  • 2 – 3 tbs softened butter
  • 2 – 3 tbs milk or cream
  • 3/4 tsp mint extract
  • a few drops green food coloring


Using an electric mixer, combine butter and sugar until smooth. Add milk until frosting reaches the desired consistency. Add mint extract and food coloring (add as many drops as you need to make it the shade green you want). Mix until thoroughly combined. Frost cooled brownies.

To make chocolate drizzle:


  • 1/2 cup chocolate chips
  • 1 – 2 tbs butter
  • 1/2 tsp. vanilla


Melt chocolate chips with 1 tbs of butter in the microwave in 30 second increments, stirring each time, until smooth. Be careful not to burn. Add additional butter and stir until mixture is a drizzle consistency. Add  vanilla and stir. Drizzle over frosting in a zig zag pattern. Cool or chill in fridge until set and cut into squares.
