Can you help me with dinner for my son’s soccer team?

Dear Cooks:

Help! I need to make a dinner for 20 of my son’s soccer teammates. I thought I would do something with a Southwestern theme. Any easy suggestions for dinner, and dessert?

Sounds like you have a hungry crowd to feed – Southwestern is a great way to go for tasty, hearty food. Plus you can make most of the meal ahead of time so you can actually enjoy the party.

Try Rachael’s fabulous Ultimate Pullled Pork, you can make it up to a day in advance – when ready to serve, just reheat the pork over low heat or even in a crock pot. Then, rather than pre-assembling the sandwiches, set up a buffet with a big pot of the pork, the peppers, rabe and crusty rolls. You can also set up a fajita bar for the boys by grilling some boneless chicken breasts, an affordable steak like a skirt or flank steak, and some peppers and onions. Thinly slice the chicken and steak and lay out a make-your-own feast with soft tortillas, guacamole, shredded cheese and sour cream. As for a side, make some Mac and Jack Pasta Salad the day before – it’s a pasta salad with a twist, made with veggies, cheese and store bought salsa – yum.

As for dessert, who doesn’t love Mint Chocolate Chip Ice Cream Sandwiches? Make your own and take advantage of a short cut using cookie mix – no one will know! Enjoy!
