Meatless Monday

Lunch: Lentil Potato Salad is packed full of fresh veggies and healthy lentils. Plus, it travels well – perfect to pack and enjoy at work or school.

Dinner: All the flavors of Tuscany are in this delicious and healthy pasta dish. Enjoy Tuscan Pesto-Dressed Penne with Crispy Kale and Garlic.

Snack: Don’t throw it out! Use the bottom of the jar of pesto from dinner (and cream cheese) to whip up this tasty Pesto Cream Cheese Spread that’s great paired with toasted baguette or crackers. Cooks note: You can use this spread on sandwiches and wraps, too.

Lunch: The best of both worlds! Guacamole Deviled Egg Salad BLTs combine your two favorite sammies into one out-of-the park lunch.

Dinner: Chicken Cordon Bleu Salad has all the classic dish’s famous flavors but in a healthy, main course salad.

Dessert: Blueberry season is coming, so get ready to make a moist and delicious breakfast, snack, or even dessert. Blueberry Lemon Bread comes together quickly and freezes well, too! Cooks note: Frozen blueberries work well in this recipe – just be sure to add them in their frozen state. Do not thaw.

Lunch: Muffaletta Salad is a great alternative to a super-size sub – and better for you too!

Dinner: MYOTO (make your own take out) with this Asian-inspired favorite. You won’t miss the restaurant with Pork Tenderloin with Plum Barbecue Sauce.

Snack: Enjoy a sweet and salty treat when you make Cinnamon Sugar Popcorn.

Lunch: BLT Salad is your favorite sandwich without the bread – genius!

Dinner: Quick, easy and inexpensive, Spaghetti with Cauliflower and Tuna is a delicious weeknight pasta dinner.

Dessert: Use fresh or frozen blueberries, black berries or raspberries in these versatile Berry Cobbler Pie Bars.

Lunch: Sweet beets, crunchy walnuts and a fruity dressing come together in a knock-out dish. Beet and Walnut Salad is healthy and delish.

Dinner: Fire up the grill for a fantastic end to the work week! Grilled Sweet-and-Sticky Chicken with Asparagus and Harissa is healthy and full of flavor. Cook’s note: Boneless chicken breasts are an easy stand-in for thighs if you’d like.

Snack: Cobb Salad Layer Dip is the perfect summer appetizer that’s great with crackers, pita chips or veggies.

Entertaining Saturday

Brunch: Ratatouille Fritatta is a crowd-pleasing BLD meal. Freeze enjoy the leftover ratatouille or enjoy it later in the week topped with a fried egg, pasta, or on its own.

Dinner: Treat your guests to deluxe steak sandwiches for a fun Saturday night dinner. Grilled Petite Filet Sliders are sure to please.

Cocktail: Enjoy an old-fashioned Egg Cream as-is or an adults-only version by adding a little rum or vodka.

Family Sunday

Brunch: Rum Raisin French Toast with Maple Bananas Foster and Ham Steak is a decadent brunch.

Dinner: An all-in-one meal, Umami-Marinated Flank Steak with Pearled Barley and Corn Salad is a Sunday supper that’s sure to please everyone in the family. Cook’s note: The yummy marinade is equally delicious on pork or steak.

Dessert: Chocolate Cinnamon Bread is delightful on its own as a dessert, served warm with a scoop of vanilla ice cream.
