Carbonara: A Love Story
As many of you already know, Rachael’s hubby John can’t get enough of carbonara. Each year on his birthday, Rach prepares the timeless dish for her partner in crime to celebrate another year in the books.
For a couple who loves carbonara so much, it’s no surprise that she has taken it upon herself to incorporate this traditional pasta into a few of her other existing recipes for unique dishes that are just as wonderful, surprising, and rich as true love.
In an ode to Rachael and John’s own love of carbonara, we’ve gathered the recipes we enjoy most to share with you in celebration of Valentine’s Day. Maybe you’ll be inspired to make one for your darling, too! And if you’re looking to catch someone’s eye…well, Rachael says it all: The best way to someone’s heart is through their stomach!
“The only trick to carbonara is tempering the egg yolks to ensure you do not end up with scrambled eggs.
Many recipes for carbonara include cream, but I never add cream. The creamy quality of the sauce should come from the tempered eggs emulsifying with the cheeses and pasta.” –Rachael
The bright yellow yolk oozes gently over the potato for a moisture-rich, loaded baked potato. Pancetta brings a nice, salty touch to cut through the buttery consistency for the perfect potato entrée.
Aren’t these adorable? A cooked egg sits securely in a nest of spaghetti for a delightfully cute, and tasty, bite.
Saffron is the hidden ingredient that gives this dish a kick! Take your mouth on a ride enjoying the creamy, salty, and spicy flavors encompassed in one impressive meal.
Mac ‘n cheese just got even more delicious with this carbonara take. Imagine melted cheese among sturdy noodles with bits of pancetta mixed in. Every bite is a dream.
Who needs a breakfast sandwich when you can have a breakfast bowl? The hollowed-out sesame roll serves as the dish so you can literally eat your whole plate!
Convincing yourself to eat breakfast in the morning is easy when pasta is involved. Load your plate with this pasta/egg casserole.
Looking for even more classic carbonara with just a slight tweak? We’ve got three more recipes that might hit the spot.
- Carbonara with Sausage and Mushrooms: We’re making carbonara even more meaty! Mushrooms give an added savory flavor making it an awesome dish for the carnivore in your life.
- Carbonara with Artichokes: Lighten up your carbonara with lemon juice. One of Rachael’s favorite tips is to always juice your lemon facing up. That way, you’ll lessen the chance of seeds ending up in your food.
- Egg Tagliatelle Carbonara with Peas and Spring Onions: A lighter version of carbonara does exist! Fresh shelled peas and parsley add some green to a typically rich pasta.
