Coco Challengers

This recipe was sent to visitor, Carla Creamier. She tells us:

“This is so easy and everyone loves them. Tastes like it contains nuts, but it’s the crunch of the Cocoa Krispies and flavor of the peanut butter chips.”


  • 1 box yellow cake mix
  • 1 cup quick oats
  • 2 large eggs, beaten
  • 3/4 cup oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 cups peanut butter chips
  • 2 cups chocolate crispy cereal, such as Cocoa Krispies brand


Pre-heat oven to 375°F.

Mix together dry cake mix and oats in a large bowl and set aside.

Stir together eggs, oil, maple syrup and vanilla.

Pour mixture into dry ingredients and stir well.

Add peanut butter chips and cocoa krispies and mix well, but do not use mixer. Batter will be thick.

Spoon onto ungreased cookie sheets two inches apart and bake for approximately 8 minutes.

Donot overcook or cookies will be hard. Cookies puff up when baking and flatten out when cool to a wonderful chewy, crisp cookie.

Yield: 3 dozen 3 inch cookies.
