Leftover Veggie Pancakes
Tina Skarkas sends us this recipe for Leftover Veggie Pancakes:
I use any and all my left over veggies that no one in my family wants to eat again. By making them into a savory pancake it makes a great side dish or platform (like a bun) for a new and interesting meal. I top it with a dollop of sour cream, honey mustard( any favorite sauce or dressing works) and dig in. Also works great as a base for poached or sunny-side eggs.
- 1/2 batch of pancake mix (mixed according to package directions)
- any leftover veggies (sauted spinich, broccoli,carrots, zucc and even onions, ANYTHING!),chopped
- salt and pepper to taste
- dash of red hot sauce
Heat a skillet over medium-high heat
Mix all ingredients together except for the EVOO.
Drop by spoonfuls into pan with heated EVOO and cook just like a regular pancake. For a little more of a meal any left over chicken, fish, beef or pork can be added to clean out that refridge!!
