Mashed Sweet Potatoes
Try serving with Creole Meatloves with Trinity Gravy.
- 4 medium sweet potatoes, peeled and cubed
- Juice of 1 small orange
- 2 tablespoons chopped fresh thyme
- 1/2 to 2/3 cup chicken stock
- Kosher salt and pepper
Place the sweet potatoes in a pot with water to cover. Bring to a boil and cook until tender, 10 to 15 minutes. Drain and return to the pot.
Add the orange juice, thyme, and stock (an amount you need to get the consistency you prefer); season with salt and pepper.
