This cocktail was given to us by master mixologist and close friend of Rachael’s, Nick Mautone, who wrote the book, Raising The Bar.
- 2 mint leaves
- 3/4 ounce simple syrup
- 2 ounces Atlantico Rum or other high quality dark rum
- 1/4 ounce Green Chartreuse
- 3 ounces sparkling cider
- Apple chip, for garnish
In the bottom of a cocktail shaker muddle the mint and syrup. Add ice, rum and Chartreuse; shake vigorously until the outside of the shaker is frosted and beaded with sweat. Pour ice and all into a highball glass or a tall wine glass and fill with sparkling cider. Garnish with an apple chip.
