Quick Red Cabbage Soup


  • 1 tablespoon vegetable oil
  • 1 medium onion, halved and very thinly sliced
  • 2 Gala, Macintosh or Macoun apples, peeled and diced
  • 2 jars red cabbage 916 ounces each)
  • 1 tablespoon pickling spice
  • 1 box chicken stock
  • 1 can crushed tomatoes (15 ounces)
  • Coarse salt and black pepper to taste


Heat deep pot over medium to medium-high heat.  Add oil, onion and apples.  Cover pot and cook 5 minutes, stirring occasionally.  Add cabbage, picklin spice, stock, tomatoes, salt and pepper.  Bring to a boil, reduce heat and simmer 10 minutes before serving.
