Roasted Tomatoes

For a complete meal, serve with Spinach and Mushroom Lasagna Roll-ups with Gorgonzola Cream Sauce and Asparagus Tips.


  • 4 vine-ripe tomatoes
  • A drizzle of extra virgin olive oil (EVOO)
  • Salt and pepper
  • A pinch of fresh basil, thyme or rosemary


Split 4 vine-ripe tomatoes across the center and drizzle with EVOO. Season with salt and pepper, to taste. Broil tomatoes.

Top with whichever fresh herb you have on hand: basil, thyme or rosemary.
