Salad for Ten in Two

For a complete meal, serve with Tuscan Chicken, Wild Mushroom Risotto and Poor Man’s Caviar: Eggplant Spread.


  • 2 bags mixed baby greens
  • 1/4 cup white wine vinegar
  • 1/3 cup extra virgin olive oil (EVOO)


Place two bags of mixed baby greens on buffet in a large salad bowl. Toss with white wine vinegar and EVOO when the guests are ready to eat, so greens do not wilt.
