Banana Cake

Fleur says this is a cake for those who don’t even like bananas. Double the recipe – it’s a crowd pleaser!


  • 1 1/4 cup sugar
  • 1/2 cup butter (1/4 pound, or one stick)
  • 2 eggs
  • 1 teaspoon baking soda
  • 8 tablespoons sour cream
  • 2 cups mashed banana (mash lumpy)
  • 1 1/2 cups flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon rum (optional, but Fleur always makes it with rum!)
  • 1 cup of dried cherries golden raisins and strawberries (optional, but Fleur always includes these!)


Pre-heat oven to 375°F.

Cream butter and sugar. Add eggs; beat lightly.

Dissolve soda and cream in a small bowl and add to the butter mixture. Beat well. Add bananas, flour, salt and vanilla. Mix well.

Pour into buttered oblong pan. Bake in 375°F oven until tester comes out almost dry.
