This simple salad goes well with a variety of meals.
- 2 pints cherry tomatoes
- 4 scallions, thinly sliced
- 1/4 cup extra virgin olive oil ( EVOO )
- Salt and pepper
Place the cherry tomatoes, scallions, EVOO , salt and pepper in a bowl  and toss until coated. Serve.
