Fruit and Nut Thumbprints


  • 1/4 cup sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla
  • 1 large egg, separated
  • 1 cup flour
  • 1/8 teaspoon salt
  • 1 cup minced almonds
  • 1/4 cup sugar
  • 1 cup minced almonds
  • Jam, preserves or fruit paste or your choosing (use more than one flavor for tasty and colorful variety)


Preheat the oven to 350˚F.

In a large bowl, cream together sugar and butter. Add the vanilla and egg yolk, and mix until combined. Add the flour and salt, and mix until a dough forms.

In a medium bowl, beat the egg white until it is frothy. Make the cookie dough balls using a 1” cookie scoop. Dip the dough balls in egg white and roll the balls in the minced almonds. Place the cookies on an ungreased cookie sheet.

Using your thumb, make a well in the center of each cookie.

Bake for 10 min then remove from the oven.

Fill each well with 1/4 teaspoon of your favorite flavor jam, preserve, or fruit paste.

Continue baking the cookies for 10-12 minutes until light brown.

Cool on a wire rack.
