Jan Hagel’s Dutch Cookies
Lisbeth Axell sent us this cookie, which was a “staple” in her home around the holidays when she was growing up.
- 1 cup sugar
- 1 cup butter (1/2 pound)
- 2 cups flour
- 1/2 teaspoon cinnamon
- 1 egg yolk
- 1 egg white
- 1/2 chopped nuts (I use walnuts)
Pre-heat the oven to 300°F.
Cream the butter and sugar. Add the egg yolk and beat until creamy.
Add the flour and cinnamon; mix well.
Spread thinly on a cookie sheet.
Brush with the egg white and sprinkle with nuts.
Bake at 300°F for 25-30 minutes. Cut into squares while hot.
