Micro-way-cool Bacon and Green Beans

Serve with Smashed Potatoes and Cream Cheese and Meatloaf Muffins with Barbecue Sauce.


  • 6 slices microwave ready-crisp bacon
  • 1 bag frozen green beans (16 ounces)
  • A drizzle of extra virgin olive oil ( EVOO)
  • Salt and pepper


Place the bacon between paper towels and microwave for 60 seconds on high. Cool the bacon and chop or crumble it up.

Place the green beans in a bowl and drizzle them with EVOO, salt and pepper. Cover the bowl loosely with plastic wrap and microwave the green beans on high for 5 minutes; stir and cook for 5 minutes more. Remove the wrap and top the green beans with crumbled bacon.
