Serve with Florentine Mac and Cheese and Roast Chicken Sausage Meatballs [1].



In a medium size bowl [3], toss together the zucchini, squash and tomatoes.

In a small bowl [3], combine the Dijon mustard, balsamic vinegar and the onion.

Whisk [4] the EVOO [2] into the mustard mixture until combined. Season with salt and pepper and pour over the vegetables.
